One of my nannies recently shared this recipe with me. It’s one that she remembers her longtime former employer making for their children regularly. In fact, this soup was a winter staple in their home. This nanny loved it so much that she asked for the recipe and has made it a winter staple in every home where she has worked since.

Ingredients:
1 Tbl Olive Oil
1 Onion Small Chopped
3 Cloves Garlic Minced
2 Tsp Dried Basil
1 1/2 Tsp Fennel Seed
1/4 Tsp Crushed Red Pepper
6 Cups Chicken Broth (sometimes I add more)
2 Zucchini Chopped
1 Carrot Diced
9 oz. Cheese Tortellini
1 1/2 Cups Diced Chicken
Directions:
– Heat Oil in Pot
– Add Onion, Garlic and Seasonings
– Saute for 5 minutes
– Add Broth
– Simmer 10 mins.
– Add Zucchini and Carrots
– Simmer 5 mins.
– Add Pasta and Chicken
– Cook till Tender
– Serve with Parm. Cheese
* Note I substitute veggies for what I have on hand, still tastes yummy.
